I made it while staying with my brother in his Brooklyn pad a few weeks before leaving for the Odyssey. I purchased the ingredients from the corner health food store along with a freshly squeezed apple, carrot, and ginger smoothie, sipping it in pure ecstasy as I walked back to his place noting on how wonderful living in the city and being able to walk everywhere can be.
Speaking of my brother, he recently got a new job in Zurich, Switzerland and will be moving there in July! It’s going to be such a huge transition for him and for our family as well. The thought of him not being in New York like he has been for the past six years will take some getting used to, (and just who’s couch will I crash on during my random trips to the city?!), but I’m so happy for him and his new adventure. And now I have a great reason to visit Switzerland!
Now back to the omelet – it’s amazing. Uh-mazing. And it’s so simple: prepare the omelet as you normally would and once the eggs have thickened sprinkle in the spinach and sun-dried tomatoes to your liking and let them warm into the omelet. Remove from the pan and add the goat cheese. Fold over and let everything melt into each other. Mmmmm. I like to keep my avocado on the side, at room temperature. It’s so good and so good for you.
I miss omelets. I haven’t had one in almost two months. Have this one for me, won’t you?
